José Andrés’ ThinkFoodLab Features New Culinary Concepts on a Rotating Basis
ThinkFoodLab is currently Pepe, a Spanish eatery dishing out traditional and not-so-traditional sandwiches. In a month, though, ThinkFoodLab might be serving Asian cuisine. It could start doling out Korean barbecue dishes. Perhaps it will be a pizzeria offering up innovative Italian pies. Founder José Andrés designed ThinkFoodLab to shed its skin every so often and debut a new culinary concept, complete with a fresh menu.
While ThinkFoodLab continues as Pepe, take the opportunity to sample some of its unique sammies. Dig into one of the pressed "bikini" sandwiches, like the quatro quesos grilled cheese. You can also opt for a traditional sandwich stuffed with traditional serrano ham and manchego cheese, plus tomato fresco. Even fans of hot dogs will find something to savor at ThinkFoodLab's Pepe, as it offers three approaches to the hot dog: a classic all-beef, frank, the butifarra with pork sausage, and the chistorra with a Spanish sausage, aioli, and brava sauce.
